Sweet Potato Salad



Sweet Potato Salad
Serves 4

2 large sweet potatoes, peeled and cut into 1/4 inch cubes (about 3 cups)

1 1/2 tablespoons cider or wine vinegar
1 1/2 tablespoons dijon mustard
1 tablespoon honey
1/4 cup vegetable oil

1 cup diced celery
3/4-1 cup diced red bell peppers
2 tablespoons chopped fresh parsley
1 scallion thinly sliced
salt and ground pepper to taste

Salad Greens

Steam the sweet potato cubes for 6 to 8 minutes, until just tender. Don't overcook. While they steam, whisk the vinegar, mustard and honey in a small bowl. Slowly add the oil in a small stream, whisking until the dressing emulsifies. Place the diced celery and red peppers in a serving bowl. Add the steamed potatoes and the dressing. Stir gently, salt and pepper to taste, and set aside to cool a few minutes. Toss in the parsley and scallions. Serve on individual plates atop a bed of salad greens.............divine!
